[No.021] The Project of Homemade Pizza

Making a homemade pizza has been a fun one. We've made about 8 pizzas in the last week, but that's because one mistake can lead to a lot of dough. My husband and I have been wanting to make a homemade pizza for the last year but never had the time or chance to be able to. Due to our new norm this year, I've been doing work remotely in which saves me time and energy from having to drive in traffic, and really gives me the opportunity to balance life.


Thankfully, we finally decided it was time to finally make our homemade pizza. As we were listening to the recipe, my husband accidentally heard incorrectly on the measurement of water. So we ended up putting 2 cups of flour and 3 cups of water. (LOL HUGE ACCIDENT). Because of this, I had to really try to salvage what I could and fix the measurements with flour and yeast.


Due to the accidental measurements, we ended up with enough dough to make 8 pizzas. It was either we tried to save it, or we throw it out and start all over again. If you know me, you know I hate wasting food. So of course, I did everything I could to save the dough! Anyway, once the dough was fixed, we were able to finally make pizza which came out absolutely amazing!


Bake the Pizza in the oven on a pizza stone (preferably) or a regular pizza pan.


CRUST The recipe for the dough was by Joshua Weissman which is the following:

Ingredients

(380g) Flour

(10g) Sugar

(6g) Sea Salt

(1g) Diastatic malt powder (1cup) Water (5g) Instant Yeast (16ml) Virgin Olive Oil (3) Cloves Garlic, grated

Directions

  1. Combine flour, sugar, sea salt, and diastatic malt powder, whisk mixture.

  2. In a separate bowl, combine water and instant yeast.

  3. Once water and instant yeast are thoroughly mixed, add to flour mixture

  4. Mix all ingredients by hand and knead for 5 minutes

  5. After kneading the dough, in a bowl, grease around the inside with olive oil to avoid dough from sticking, and place dough in bowl

  6. Rest for 1 hour

PIZZA SAUCE From Sam the Cooking Guy: Ingredients

  • 2 tablespoons olive oil

  • 1 medium yellow onion, diced

  • 3 large cloves garlic, minced

  • One 28-oz can whole peeled tomatoes

  • 2 tablespoons tomato paste

  • 2 tablespoons balsamic vinegar

  • 1/4 - 1/2 teaspoon red pepper flakes

  • 1 tablespoon sugar

  • 1 tablespoon dried oregano

  • Kosher salt and pepper

Directions

  1. Heat oil in large saucepan over medium heat and add onion - cook about 5 minutes

  2. Add garlic and cook another minute or so - just until fragrant

  3. Add tomatoes, squishing each one with your hand to break it up as you add it - if using your hand is an issue break them up with a spoon but hey this is cooking so deal with it junior

  4. Next put in tomato paste, balsamic vinegar, red pepper, sugar and oregano

  5. Stir really well, combining everything

  6. Add salt and pepper to taste

  7. Bring sauce to a boil, then turn down heat and let simmer about 30 minutes

Once the dough and sauce is ready, preheat oven to 450 degree Fahrenheit

TOPPINGS


We went to the store and grab things that we wouldn't be able to really make from scratch. For the pizza pictured in this post, the following ingredients were used:

  • Shredded Mozzarella Cheese

  • String Cheese (for stuff crust)

  • Salami

  • Sun-dried tomatoes

  • Oregano

  • Red Chili Flakes

1. Spread sauce on dough, top with cheese, and begin to layer with the ingredient you prefer. We layered the pizza with sauce, cheese, salami, more cheese, sprinkled some oregano and red chili flakes on top, and added the sun-dried tomatoes.

2. Let the pizza cook in the oven for about 12-15 minutes or until crust is golden brown.

3. Make the Garlic sauce for the crust while waiting for the pizza to cook. Mince the garlic, mix with virgin olive oil, and a pinch of salt.

4. Once pizza is removed from oven, brush garlic sauce along the crust and let sit for about 10 minutes to cool down. If toppings don't cool together, toppings will slide off.
