Music: Sunday Best by Surfaces ( I do not own this song)
Since we are unable to travel these days to celebrate birthdays, anniversaries, baby showers, and other moments we all would love to celebrate together, the best way my household was able to celebrate birthdays was to have a feast at home.
I chose the Hawaiian theme since we all would of loved to visit Hawaii this year but due to the circumstances we were unable to, so we came up with some ways to bring Hawaii to us. We dressed up and put our leis on, and even decorated the table and used Hawaiian themed plates. It wasn't a full on 100% Hawaiian theme feast, but we definitely incorporated some of that and definitely had a feast.
One of the meals we decided to make was a pineapple mango relish to accompany the bacon wrapped hot dogs, and used regular and Hawaiian bread as the buns. I made this especially for this feast because it reminded me of when my husband and I took a trip to Kauai. When we visited, we saw a little shop that sold hot dogs with a pineapple relish instead of our usual pickle relish. At first we were a bit unsure as to how it would taste; however, after that one bite, it was so delicious that we stopped there once a day during our trip and even bought shaved ice with macadamia nut ice cream (YUMMMM).
Another dish that we tried to make was a Hawaiian type marinade for chicken. For the marinade, we mixed brown sugar, ketchup, soy sauce, ginger, garlic, and pineapples. Marinade the chicken for at least a couple of hours or overnight. This marinade we put together actually turned out to be super good.
Again, we tried to some how make our feast as close to a Hawaiian theme as possible but in addition to the two main dishes above, we also made Bulgogi, Bacon wrapped hot dogs, Steak that we sous vide prior to placing on the grill, grilled Hawaiian beef kebabs, and fish stuffed with veggies and placed on the grill.
Take a glimpse of the first episode of "Cooking with K & B"made by TimmyBing. This is the first of many videos showing the different dishes my husband and I team up and made together. Absolutely grateful for this video to share the different dishes we made for this dinner.
Despite the circumstances we are facing with this pandemic, and the other situations that is currently happening to us, find time to sit with the people you love whether in person or virtually. Make the meal together if you can physically, but if not, make the meal together virtually. The whole point is finding ways to be together whether you can or cant.
