[No. 003] The Project of French Onion Soup


After weeks of debating when I would attempt to make french onion soup, today was the day. French onion soup is one of my sister's favorite soups. In addition to that, my husband was sick with the flu and I wasn't feeling well at all. It's a new year and yet the bug came around, and soup usually makes me feel a lot better.


After researching different recipes to make french onion soup, it was difficult to choose between which recipe to go with. Most recipes seemed complicated or would take a very long time to make. After looking over the different recipes, I went ahead and used some of what I found and found ways to make it my own.


This recipe is simple, quick, and still delicious.


Simple French Onion Soup

Serves: 2

Ingredients:


1 Large Sweet Onion, chopped thinly in halves

2 Cups Beef Broth

1/8 tsp dried thyme

3 tbs Butter, divided

1/4 tsp olive oil

1/2 tbs Balsamic Vinegar

pinch of salt

2 pieces sourdough bread slices

4 slices Gruyere Cheese


1. In a small pot, melt 2tbs butter and mix the olive oil on medium heat.


2. Once mixed, add in the onions and salt, cook until onions have softened. Cover pot with a lid to softened the onions quicker. Stir often so onions do not burn.


3. When onions have fully softened, add in the the balsamic vinegar and stir for another 5-10 minutes.


4. When onions have been mixed fully, add the beef broth and dried thyme, cook until boil.


5. As the soup comes to a boil, in a skillet, melt 1/2 tbs of butter and place a piece of sourdough bread in pan. Flip bread so butter is on both sides, add a slice of gruyere cheese.


6. Cut in half, place on top of each other so cheese can fully melt. Repeat for second slice of bread.


7. Once soup comes to a boil, place in bowls, add one slice of gruyere cheese on top, and serve with the toasted sourdough bread.
